I just love watermelon. It’s sweet, refreshing, great for hydration, and has lots of vitamins and lycopene. You would be surprised that a fruit that is about 92% water can pack a great punch of health for your body!
This good sized guy is a Springdell beauty.
Cut it in half to reveal it’s true potential, the pinkish-red flesh speckled with black seeds. Most store bought watermelons are seedless these days, but you can have some great seed spitting competitions with this one! If you are not a seed fan, today’s post is a great idea for you, why not make a watermelon lime mocktail?
Slice your watermelon into chunks and place them into your vitamix or food processor on the lowest speed. You are looking to remove the juice but not to crack into the black seeds.
Place a fine mesh strainer over the pitcher of your choice. I chose a pretty one, so that the drinks would be a bit fancy and a focal point for the table.
Strain the mixture, pressing it with a spatula so that you remove as much of the juice as you can. The pulp and the seeds will remain on the top. I did this in three rounds, using 3/4 of the watermelon. I had to save a few slices for the kids to enjoy of course (picture below with some green peppers and cucumbers for munching too).
Juice 2-3 fresh limes, you are looking for about 1/3-1/2 cup of lime juice, depending how much you enjoy lime!
Pour that into the pitcher with the watermelon juice with 3-6 Tablespoons of honey. Again, these ratios are all to be made to your liking. I suggest to add the honey one Tablespoon at a time and test after each one. Add some fresh picked mint leaves from the Springdell pick your own garden and some ice cubes.
Let this sit in the fridge to chill and let the flavors meld together, the mint needs some time to work it’s magic. Then serve and enjoy! If you are feeling fancy, garnish with a slice of fresh lime. Enjoy!
