Warm Purple Cabbage and Apples


I’m guilty….I hadn’t used my purple cabbage from a whole share ago!  It was time.  I have recently been reading about all the benefits to apple cider vinegar so I was sure to add some to this cabbage dish.  The tart flavor gets balanced out with a little sugar and some freshly sliced apples.  A sweet tart dish that will go on my repeat list of recipes.  Let’s get right into it.

Ingredients:

  • 1 Purple cabbage
  • 5 Star anise
  • 2 bay leaves
  • 1/2 teaspoon of cinnamon
  • 1 cup of vegetable broth
  • 3 Tablespoons of sugar (you could use brown sugar here too)
  • 1/3 cup of unfiltered apple cider vinegar
  • 1 apple peeled and cut into chunks

Procedure:

Here is where you realize just how easy this one is.  

Into a large pot add bay leaf, cinnamon, sugar, and star anise pods.

Add the vegetable broth and apple cider vinegar.

 

Thinly slice your cabbage and place it on top of the liquid.

 

Cover the pot and let it come the a boil. It may not seem like there is enough liquid but the cabbage will release liquid during the cooking. When it reaches a boil, reduce it back down to a simmer. let it go for about 25 minutes.

 

Remove the bay leaves and anise pods and discard them.

 

Chop your apples into bite sized pieces and add them to the dish.

 

That’s it! Serve warm or at room temperature.
