Hi everyone, Jess here. I was going to parse this out into several different recipes, but then I decided to save my time and yours. The flavor combo is great! Sweet potatoes and goat cheese work well, the creaminess against the sweet, the mellow flavors. Throw in a few curveballs such as caramelized onion,maple balsamic glaze, heavy cream, or rosemary herb butter, and make it your own!
The form it takes is almost secondary. So far I’ve tried the following:
Sweet Potato and Goat Cheese Mash (loosely adapted from this recipe from Stacey Homemaker)
Sweet potato Rounds (shared by Fellow Springdellian Pam H)
Sweet Potato Casserole
They are all great and very flexible.
Again, there are lots of ways to make this side dish happen, so I encourage you to pick your favorite flavors from the ingredients above and make it your own!
