- 4 cups fresh strawberries, diced
- 3 1/8 cups all-purpose flour
- 1 1/2 cups white sugar
- 1/2 tablespoon ground cinnamon
- 1 tablespoon vanilla
- 1 teaspoon baking soda
- 4 eggs, beaten
- 1 1/4 cups chopped walnuts
- Preheat oven to 350 degrees. Butter and flour two loaf pans (9 x 5 inch).
- Lightly sprinkle your diced strawberries with a light sprinkling of your 1 1/2 cups of sugar and set aside in a bowl.
- In another bowl, mix together flour, sugar, cinnamon, salt and baking soda; Mix together oil, eggs and vanilla with the strawberries. Combine wet and dry mixtures before folding in the walnuts. Pour the mixture evenly into your loaf pans.
- Bake for about 45-50 minutes, until a toothpick inserted into the center comes out clean. Let the loaves cool for at least 10 minutes before removing them from their pans. Enjoy!
