Spaghetti with Meat Sauce

It’s the weekend.  It’s all about winterizing at our house today.  The hoses were brought in and the outside water turned off.  The tomato cages, chairs from the back deck, clothes line, and sun umbrella are all stashed away for next year.  Lots of leaf cleanup is on slate for the afternoon so we need a nice hearty and warm lunch today. We all sat down to enjoy a spaghetti lunch before heading out into the chilly fall air again.

This lunch, as many of the meals in between share boxes, was a mix of what we have in the freezer and the fresh bits and pieces we have left from boxes of recent past.  I started with one package of Springdell ground beef from the recent meat share.  How about a little shout out for the meat share!  If you don’t have a meat share it is really something you should consider for your future.

I got the beef cooking in a pan with two cloves of minced garlic.

I let that cook and the meat brown a bit in the pan.  Drain off the fat and add a bit of salt.  I used one small green pepper from a recent share, seeded and chopped, added to the pan.

If this wasn’t delicious enough as it was, I added a container of my homemade tomato sauce from this years harvest.  In the sauce is some basil from the share of course!  Now, to make this hearty and beautiful I also added about 1/2 cup of cream and 1/2 cup of fresh grated parmesan cheese.  It turns rich and flavorful with all of the goodies coming together into a sauce.

To finish it off, in goes about a cup of spinach I had leftover from the super greens share as well, a little green is just what the sauce needed.

Put it together with your favorite pasta.  I used a gluten free corn and rice blend spaghetti.  It was more like dinner wasn’t it? I guess we are eating light tonight.  Enjoy!
