I was taking a chance with these potatoes tonight. Neither of my boys like potatoes, I think it’s a texture issue. But I had a whole bag of beautiful potatoes from the first winter share just waiting to be cooked and consumed. Now, I knew if I couldn’t make this one fly with the little guys, Alex and I wouldn’t have any trouble making these disappear.
Start by giving your potatoes a good scrub. You keep the skins on with this one so you need to give hem a good cleaning, but you get the bonus of the added nutrition in the skins.
Get a rimmed sheet tray lined with foil and sprayed with cooking spray. Melt three Tablespoons of butter in a small dish. You will need a brush to apply the butter and have salt on hand for a liberal sprinkle before they go in to cook.
Slice the potatoes about 1/2 – 3/4 inch thickness.
Brush the butter onto both sides of the potatoes and sprinkle with salt, and any other seasonings you feel in the mood for. Into a preheated 400 degree oven for about 35 minutes, flipping them half way through the cooking time.
Check them with a fork for tenderness. Now, here is the part where I trick my kiddos into eating potatoes. I know their weakness, and I’m sure the weakness of many others out there as well…
BACON! Crumble 6 or 7 pieces of bacon and sprinkle it onto the potatoes and don’t forget to add my second secret weapon tonight…
CHEESE! OK, nothing is wrong this these little guys. They are crispy on the outside, creamy on the inside and pack a punch of bacon and cheese flavor on top. Melt the cheese with a few more minutes in the oven and you are all set to enjoy.
Did the kiddos eat them you ask? Oh yes they did. All of them.
