Did you know that potatoes are considered Americas most beloved vegetable? We Americans consume 110 pounds of potatoes a year, per person. Potato chips remain the most popular snack item and have been for 50 years. The average American consumes over 4 pounds of potato chips a year. We do love our spuds! I don’t know of any statistics about potato pie but I can tell you that there were no leftovers to package up after dinner tonight. That always says something about a meal, right?
Since tonight is a potato PIE, in my mind it needs to be round, but by all means if you are feeling in a square mood then go for it. Tonight I chose a stoneware pie plate because it keeps its heat so nicely. Whatever dish you choose, be sure to give it a good spray to prevent the potatoes from sticking.
Set your dish aside and preheat your oven to 450 degrees. This is a longer cook at a high temp, you want to make sure the potatoes are cooked through and not crunchy. While the oven is heating, pull out a nice package of Springdell ground beef.
Brown it up so it has a nice crust on it. Add 3-4 cloves of minced garlic from the last winter share as well.
To get the potatoes ready I give them a really good wash. You can choose to peel or not peel, it’s up to your preference in this recipe. You will need 2 sweet potatoes and 2 white potatoes. Slice them thinly, I use my mandolin but a food processor with a slicing disk or slice them thinly by hand works too. Layer the white potatoes onto the bottom of the dish, covering the surface completely.
On top of that is a layer of the sweet potatoes. This uses about 1/2 of the potatoes.
Your meat and garlic goes next with a few tabs of butter.
Repeat the layers of white potatoes and sweet potatoes on top of the meat. The final layer is cheese!
Cover the dish tightly with tin foil and bake in the oven for 45 minutes.
It comes out ooey gooey with a crispy potato and cheese “crust”. That’s the part we all fought over at the table. Enjoy!
