Tonight I knew I was going out so I needed a one dish meal that I could prepare ahead and just pop it in the oven for the family before I left.
I pulled out some Springdell hot Italian sausage, Springdell potatoes, some scallions, cheese, milk and dill. Since you guys are getting to know me you will notice that I don’t work off of recipes very much. When savory cooking I tend to do more of a “what I’m in the mood for” type cooking. So here’s what I threw together:
Put some non stick spray in a baking dish, I used a medium sized oval dish myself. I took one link of the hot sausage and took it out of the casing to have sausage crumbles, then just gave it a cook on the stovetop to brown it up.
When it’s nice and brown, lay it out on a plate lined with a paper towel to absorb the excess fat.
While the sausage was cooking I peeled and sliced the potatoes rather thinly. Slice the scallions as well. I layered the slicers from one potato, one sliced scallion, 1/2 a cup of cheese, 1/3 cup of milk, and a few shakes of dill into the dish with all of the cooked sausage.
Then add another layer of potato, scallion, another 1/2 cup of shredded cheese, another 1/3 cup of milk and a few more shakes of dill. Cover the dish completely with foil and cook in a 375 degree oven for about 45-60 minutes. Uncover the dish and check that the potatoes are tender. Serve warm with a salad on the side.
When I got home just minutes ago there was a bowl of this waiting for me. I love that, when all the work is done earlier in the day and all there is left is to enjoy. My favorite part of the dish was the delicious cheesy crust that formed around the edge of the dish, yummy! So, next time you know you have a busy night ahead of you, give this one a try.
