Crock Pot Winter Squash


I mentioned yesterday that I would talk quickly about butternut squash in the crockpot.  I read about putting a whole squash in a crockpot and was excited to try it and see what happens!  

Start with a squash that can fit into your crockpot, it doesn’t have to be a butternut.

I cut mine in half, but you can also just put it in as is.  Add two cups of water and set it on low for 6-8 hours.

That’s it.  Seriously.  No need to be home so the squash can roast, it just happens in the crock.  This means you can have squash on week nights now too, it will be done when you get home from work!  I can’t believe how well that worked, give it a try.
