Cilantro Ginger Burgers

Happy Mothers Day!  This holiday has come to mean something very different since I have become a mother.  I have always been thankful for my mom and all that she has done to help shape who I am today.  Now that I am a mother, I understand so much more what that means.  Mothers are selfless, we would give anything for our children.  Having happy children is what makes mother’s happy.  So thank you all of the moms out there, for all that you have done and will do for your families in the future.  Thank you to all the moms out there who work together to help create the “villages” that we rely on. Happy Mother’s Day!

Today we are kickin it BBQ style.  I whipped up some burgers for the grill, but gave an asian twist to your standard burger.  I started with a base of ground beef, salt, pepper, and about 4 Tablespoons of soy sauce.

Into that went some fresh ginger.  I really don’t recommend using anything but fresh ginger here, it really gives the burger its fresh spicy taste. Did you know this is called a “hand” of ginger?  Just a fun fact to hold on to for a trivia night.

Next is a very healthy handful of fresh cilantro. Would you believe I still had cilantro left?  Storing it in the fridge in a cup of water with a plastic bag set loosely on top really did give it a long life!

Chop that up and add it to the bowl.

Notice I didn’t mix the beef until all of the ingredients were in the bowl?  That is because you shouldn’t over work your beef, it will get tough.  We all want a nice juicy burger. SO, gently combine the ingredients with the beef and form into patties.

Gently press the center of your burger in so that it cooks evenly on the grill and doesn’t puff up in the center.

Once it was nicely grilled I placed it on top of a bed of glass noodles and served it with sliced carrots.  I also added some sauteed bok choy but forgot to take a photo of that plate!

Enjoy!
