Tonight I wanted a portable dinner we could eat outside. The boys asked for a dinner on the deck after being cooped up inside today due to the humidity and the storms I thought, why not?
I started out with this beautiful spread :
The cucumber and zucchini came from my Springdell seedlings in my garden and the rest was from our share. I knew I wanted to wrap these veggies so I did a bit of chopping…
Notice I did not cut things into rounds, I find that longer pieces work better for wraps. I needed to cook up a bunch of theses veggies so I divided them by cook times, the carrots and peppers went in first.
When those softened I added the zucchini and summer squash to the party.
I knew the weather was going to be tough this afternoon so I grilled my bone in, skin on whole chicken legs this morning. I cooled them and took the meat off the bone so it would be ready for tonight. So, to assemble the wraps I started with some fresh mozzarella, cucumber, basil, and shredded chicken.
I then added the warm veggies
Wrap that up in whatever wrap of your choosing and you have a great summer meal!
I have yet to find a gluten free wrap that I like, if you have any suggestions I would love to hear them! This is what the gluten free version looked like tonight in the Buck house. Enjoy!
