Happy Thanksgiving Springdell Family! I hope that today, and many other days in the year, you are spending time reflecting on your life and spreading love and kindness. This is a day to spend enjoying family and good friends. So here at CSA365 we wish you all a very Happy Thanksgiving!
Spending time with friends and family, time giving back to others, is what today is all about. That being said, don’t spend all day in the kitchen. Spread out the work to others as well, get some of those friends and family helping you out With your meal. This quick squash side dish is impressive, different, full of fall flavors, and easy to put together.
Use that acorn squash, we all got a bag of it in this last share. Cut three of them (or as many as you need) in half, scrape out the seeds and pulp and bake them on baking sheets until tender. While that is baking, peel and chop 3 apples for the filling.
In a pan add butter, brown sugar, and cinnamon. Cook, but not too much, keep in mind they will be going into the oven shortly.
Also add about 1/3 cup of raisins. Cooking them to rehydrate them and plump them up.
While those are cooking a little, cube up some sharp cheddar cheese.
When the squash is tender, pull them out of the oven. Mix the cheese into the apple mixture and use the mixture to stuff the squash.
Back into the oven they go for 15 mutes or so, or until the cheese is melted and gooey. That’s it! The display is impressive and I’m sure it will be a big hit at your Thanksgiving table.
