Roasted Tomatoes with Herbed Goat Cheese


Today I’m enjoying Maine tomatoes with Westfield Farm herbed goat cheese out of Hubbardston, MA.  This couldn’t be an easier way to see whole tomatoes disappear.  Preheat your oven to 450 and let’s go!

Simply halve the tomatoes lengthwise and top them with generous slices of the goat cheese.

imageSet them on a rimmed cookie sheet and drizzle with a little bit of olive oil. Even better if you have it, skip the olive oil and add a scrape of rendered bacon fat from the Springdell bacon.

Place these bad boys in the oven at 450 for about 15 minutes.  Turn on your broiler and broil for just a minute or two to bring a nice toasty brown to the goat cheese.

I suggest serving these with a hearty and crusty bread. Once you sink your fork into them, they become a molten mess of deliciousness that just screams for a bread scoop. I’d also suggest a drizzle of maple balsamic glaze, but I feel like I’m putting that on everything lately.  Oh well, I say go for it!
