Chile Rellenos

A crisp charred poblano pepper stuffed with cheese, dipped in egg batter and fried. What’s there not to love? This version is healthier than the deep fried version, and worth the extra few minutes. Serve with rice and beans for a completely delicious meal!


Stuffed Sugar Pumpkin

This comes from a recipe called “Pumpkin Stuffed with Everything Good” and is quite flexible depending on what goodness you have on hand.Crumbled bacon, cream, swiss chard and gruyere cheese is a good combo, but there are many others out there! Find your own and enjoy!


Ratatouille 2015

This is one of two variations on this seasonal dish (hence Jess labeled this one “Ratatouille 2015”). It’s a recipe we love due to it’s generous use of many late summer veggies, flexibility of ingredients, and, of course, tastiness. Enjoy as a side dish, as a main dish on top of some pasta, or use your imagination!
