Potato Pancakes with Bacon and Chives

These were quite yummy. Parmesan and Sharp Cheddar were the cheeses used to bring these flavorful pancakes to life. The bacon and chives also added boatloads of flavor.


Kale and Mushroom Lasagna Roll-Ups

Fresh ricotta and heirloom yellow tomato sauce put this over the top. If you don’t have prepared tomato sauce, diced tomatoes work as well, the ingredients are pretty flexible here. Remember the Parmesan, mozzarella and lasagne noodles!
