Corn and Snap Pea Salad

Snap peas an corn compliment each other in this sweet and crunchy salad. This recipe is quite flexible depending on what fresh veggies and herbs you have on hand. Note the tip for making shortbread cookies included in the post, along with some other surprises!


Summer Squash Fritters

The ole’ fritter is a great standby for many lingering veggies. I used cornmeal here, but flour also works. Parmesan cheese is a nice accompaniment, but feel free to make this your own, it’s totally a flexible treat.


Mirin-Braised Pak Choi and Shiitake Mushrooms

Mirin is a sweet rice wine that tastes great in this dish, but you can get by with white wine and a little sugar. Silken tofu is lovely here. The sauce is subtle, it’s a nice way to highlight your ingredients without too much getting in the way.
