A simple way to brighten up your chicken. If you use a fresh lemon, stick it in the cavity before roasting for a little extra aromatics. If you have potatoes and asparagus kicking around, enjoy the side dishes also listed in the post!
This is a nice way to use those oranges that have lots of seeds. The juice and honey really make this dish! Great bird, juicy and delicious. Of course make a gravy out of the juices in the bottom of the pan. Add more fresh squeezed orange juice to really punch it up.
Simple and delicious, this chicken is one that my father-in-law makes. I used the last of my citrus for the juice my chicken actually cooks in. Serve with Creamy Herb Fingerlings or some of that summer freezer corn as complimentary sides.
