Freezing is a great way to preserve scallions for later recipes. Simply chop them…

Toss them in the freezer for a couple of hours on a cutting board, cookie sheet, or other flat surface. Then take them out and scoop them into your freezer bag before popping them back in the freezer.

The extra step of freezing before bagging ensures that your scallions won’t stick together in the freezer bag, making it simple to take in out only what you need as you need it. Never again will scallions waste!

Fried Rice with Tofu Carrots and Cashews

This easy vegetarian fried rice is very flexible in the veggies you decide to add to the mix. This is great with fresh basil, it’s a recipe that could make a summer appearance sporting a completely different look. If enjoying in the winter, carrots and scallions bring a nice freshness. The cashews always add extra flavor and a protein packed punch.

It’s fast, it’s furious, and utterly scrumptious. Sirloin Tips, Flank Steak, or other Stir-Fryable cut, sliced into thin pieces and cooked will work with this. Precooked tofu, chicken or pork also work great in this recipe, along with a variety of veggies. A great one to make your own!
