Ingredient: Purslane
I have a bit of a love affair with purslane. This weed has been going mainstream as of late. It’s succulent leaves have a nutty flavor and a nutritional content that is rivaled only by the heavy hitters such as kale and collard greens. I’m fortunate to have it growing amongst my carrots at the Community Gardens. It’s dynamite in a morning smoothie, in a stir-fry, a mixed green salad, or simply as-is!
