Ingredient: Pork Butt/Boston Butt
This lovely boneless pork butt came from the Black-Footed Mule pig, a breed that is a bit lighter pink compared to other traditional breeds. It fares well in the summer, and did I mention it’s delicious? We enjoyed a slow cooked version, though, truth be told, I slightly overcooked it this time around. I’m not sure if it’s my one-pot slow cooker malfunctioning (it’s getting old and not quite working how it used to), or just this particular cut of meat I’m not yet accustomed to. I plan to go with a slow roast the next time I try this cut. Meanwhile, it was pretty great in pulled pork sandwiches. To be continued!!!
