PUT HERBS IN ICE CUBE TRAYS AS FOLLOWS

Fresh herbs – I use this one all the time. I LOVE the Springdell herb garden. You pick the herbs from the garden, chop them up and put them in the cubes. Add oil and freeze. Remove the cubes and put them in a ziplock. Don’t forget to label them with what herb they are. I also like to do herb combos that I know I use together a lot for pasta sauces etc.

Simple syrup – I make a simple syrup out of equal parts sugar and water. Heat until the sugar has dissolved. You can freeze as is and just pop a cube into a beverage or you can steep the simple syrup with herbs or flavors too. I love to use mint from Springdell and let that steep. I let it sit in there until the syrup is cool, strain out the mint, freeze and I have cubes to use in my iced tea. Delicious.

Summer Vegetable Parmesan Bake

This was a quick dinner, made up while we were on vacation in Maine. It turned out pretty yummy, and the layer of roasted cherry tomatoes on top was quite fun. Allow time to salt your eggplant and squash slices to remove excess moisture, and you have a winner! Please note in this recipe I used some summer marinara sauce from a previous recipe. The ingredients are flexible here, so feel free to skim the recipe then make it your own as you see fit!


Tomatillo Avocado Ranch Dressing

Fellow Springdellian Ann B (photo) visited Carlsbad Cravings for this delicious dressing, making great use of your jalapeños. It is versatile and aside from the veggies and herbs, can be made with your kitchen staples! Try it on the veggie-rich Chipotle BBQ Chicken Salad, also on the Carlsbad Cravings website!


Eggplant Parmesan with Summer Marinara

This is the quintessential August recipe, allowing for many seasonal veggies to be swapped in and out of the dish. Allow yourself time to simmer the sauce and salt and press the eggplant slices, it really makes a big difference. Aside from the eggplant, tomatoes and Parmesan cheese foundation, much of the dish is flexible, so leave it to your imagination!
