Ingredient: Grains and Dried Legumes

Whole Wheat Biscuits

This simple recipe is a wonderful use of the whole wheat pastry flour we see in our Winter share boxes from time to time. In lieu of buttermilk, I use 1 cup of cream/milk mixed with 1 tablespoon of lemon juice (after letting it sit for about 5 minutes, it’s ready). Great with stews, or topped with blueberry sauce and whipped cream for dessert!

Healthier Fish Sticks

Got picky eaters that somehow enjoy supermarket fish sticks better than baked fish fresh from the sea? Perhaps give this one a try! It’s baked, local and light years healthier than the processed minced fish you’ll find in the frozen food section. You can use haddock or cod in this one.

Sweet Potato and Black Bean Soup

From fellow food blogger Sherri at “To Simply Inspire”, this recipe has done just that! A healthy and hearty soup for sure! If you need to cut some time, microwaving the sweet potatoes instead of baking them helps, as well as sautéing the pepper and onion directly into your pot before adding the beans and broth. If going olde school, use 4 cups of homemade veggie broth in lieu of the carton. I served with avocado, lime wedges, and a dollop of sour cream.
