Apple Roses

Do you remember the cyber craze about Apple Roses? If not, here is a link to my favorite version so far, from “Cooking With Manuela”. Puff pastry and apricot preserves (not on the “staples” list) are needed to make these. They are novel, easy and fun to make with the kids!


Vegetable Moussaka

A little bit of work, but a whole lot of flavor! The rich and creamy béchamel brings it all together. Fresh or frozen veggies may be worked with, see what’s in season or what you have on hand and as always, make it your own!


Crispy Eggplant

Here’s an interesting way to flavor up your eggplant – Mix together 1/2 cup corn meal or bread crumbs, 1/2 cup almond meal, 1/2 cup crushed potato chips. There’s a bonus recipe for pickled peppers in this post, too!
