Tomato Jam

This one I tried by Marisa from Food In Jars. Tomato jam has a sweet and tangy taste with the mouthfeel of a marmalade. This particular recipe takes a little longer than others, but no pectin is involved. It’s a welcome notch up from ketchup and great with just about anything. Try it with goat cheese toasts or grilled cheese sandwiches!


Sautéed Corn with Black Beans and Red Bell Pepper

This one was shared by fellow Springdellian Dawn DeMeo a great one to use up the last of the seasonal corn, peppers, jalapeños and onion.  The source is Cooks Illustrated, a fabulous local test kitchen.  It’s a wonderful recipe as it’s very flexible in its ingredients, and easy to make your own.
