Carrot Top Greens-
There is a lot of controversy about whether or not you can use the greens from your carrots, are they poisonous? The answer to that is no. Unless you are eating them in large quantities, carrot tops are totally edible and quite tasty! So feel free to remove the greens from the carrots and eat them up.
Carrot top greens can be used for garnish as well as in soups, stocks, in salads and pesto. Be creative and explore how carrot tops are used.
Remove the greens from the carrots and store them in a produce bag in the refrigerator. The carrot tops will last 3-5 days but it is recommended that you use them soon after removing them from the carrots.
There is no federal analysis on carrot top greens but they are making the assumption that they have similar nutritional value to the carrot itself.
