Bacon has grown in popularity.  It is not just for breakfast anymore.  Bacon is used in both sweet and savory applications, below is a photo of bacon going into a batch of chocolate chip cookies!

Bacon comes from our friend the pig.  It is a fatty meat from the belly and sides of the pig.  Most bacon goes through a salting or curing process, as well as a smoking process. In my opinion, bacon is delicious and we love farm fresh bacon.  You will notice a significant difference between fresh local bacon and the bacon packaged in a grocery store.  Bacon has a high fat to meat ratio, it is essential for the flavor we all know and love.  Save that bacon fat!

Recipes Using Bacon

Quick Potato Skins

Sarah has a tough time with potatoes in her house, as her kids don’t like them. This is a game changer. Bacon and cheese make them irresistible!

Kickin’ Collard Greens

Got bacon and collards? Why not try this Kickin’ Collard Greens recipe? Though it was good, I recommend leaving out the red pepper flakes until the end and let folks season to taste themselves. I love spicy food, but the red pepper flakes against the smoky bacon flavor of the collards was a bit overpowering for me. I’ll try this one again as the rest of the flavors made for fine comfort food! Remember to have chicken broth on hand for this one!

Roasted Cabbage Wedges with Bacon

This idea came from Fellow Springdellian Susan MacDowell a few seasons back. If things are drying out while roasting, I just drizzle a little chicken stock over things. This makes sweet and flavorful cabbage!
