Hi everyone, Jess here, scraping by as the transition from no-school to school commences.
I can’t pretend I’m not in the same boat as some of you, wishing there were more hours in the day to make all these veggies into delicious meals. As our schedules fill up and as many of our routines shift from summer into early fall mode, it can be hard to keep up. Fortunately, many of these veggies freeze well and easily, and most are delicious raw! Slice up a pepper and leave it on your counter with some of Nature’s skittles or a sliced peach, enjoy a guilt-free snack as you walk by. Toss a little veggie into a quick morning omelette/wrap (worth waking up 10-15 minutes early). Try Ratatouille (a recipe made for August crops), and if time doesn’t permit, try slow cooker Ratatouille! As always, email me with your specific veggie-issues. If you’re finishing all your veggies and can’t relate to the struggle, email me that too, so that your tips can be shared with the rest of the group! We will get through this, and our bodies will thank us!

Single Shares enjoyed the above with the Sweet Heart Bell pepper variety only. Small Shares enjoyed the above with different pepper varieties (Sweet Heart Bells and Cayenne). Mega Shares have the same as above but also have Tomatillos, Sweet Heart Bells, Cayenne and Poblano Peppers, and a few additional secret tomato varieties!
