Hi everyone, Jess here to report on a whirlwind of a week! It all started with the Superbowl, but we’ll get into that in a minute. First of all, let’s check this CSA basket out!

Let’s take a quick stroll through Winter CSA pickup #5:
I hit the ground running on CSA pickup day with a yummy root veggie chili. The parsnips and beets joined a myriad of CSA items from the chest freezer, including bell and jalapeño peppers, celery, and ground beef.
After several hours in the slow cooker, all of the flavors and colors began to meld together in harmony.
The leftovers the next day were even more scrumptious, a nice bowl of comfort food after a rousing Superbowl game.
After much of my Winter CSA goodness went into the chili experiment, I cooked up a few “safe” dishes, including these creamy garlic mashed potatoes for a church potluck, and this beef cube steak dish.
Some of the mushroom gravy was set aside to be enjoyed on the extra mashed potatoes, and a big ol’ pan seared pork chop with some sautéed sliced apples stole the show.
For Valentine’s Day, I cooked my other half’s favorite dish, Hot Pot Bibimbap complete with the most tender London Broil imaginable. CSA spinach, garlic and egg also made an appearance. Had I more time before getting to the airport, I would have shredded some sweet potato in there. It’s a messy looking dish, but when the Hot Pot is sizzling you want to move fast!

Fellow Springdellian Crystal R. tried a version of this Damn Delicious recipe using goat chorizo from the farmstand in place of the andouille sausage. Two thumbs up!
Fellow Springdellian Carolyn W. used her creative energies to shape some Springdell sirloin patties into the shapes of hearts for Valentine’s Day! What a great idea!
Finally, Fellow Springdellian Alissa W. shared this photo from her beautiful Valentine’s Day Dinner from the Springdell Valentine’s Day basket. The dish was complete with roasted parsnips and a well-dressed spinach side. It looks so delicious, thank you for sharing, Alissa!
