Hello everyone, Jess here. I just wanted to drop a quick line to thank everyone who checked out our video and/or voted for our entry in the CSA Video Contest. Our video made it into the final 8 and we had a great voter turnout, and that’s all thanks to you, our fellow farm family! Though we may not have won, it was an honor to have made it as far as we had. We are thrilled to be a part of getting the message out about the wonderful benefits of a CSA lifestyle.
Our sincere and heartfelt congrats to Summit CSA way up in the Rockies for winning the contest. It’s amazing what they are pulling off at high altitudes with land that doubles as snow storage in the winter. Check out their winning video!
Lastly and not leastly, our very special thanks to all that got the word out, including Springdell Farm for boosting our post, and the ladies over at Fresh Start Food Gardens for sharing, my fellow Blogger Sarah Buck, and the many members of my farm family. It is so fun and a total honor to be a part of National CSA Day on this level. Enjoy the day and rejoice in knowing that you are a part of an awesome food movement.
Meanwhile, I’m enjoying those Maine tomatoes with the Westfield Farm herbed goat cheese out of Hubbardston, MA. This couldn’t be an easier way to see whole tomatoes disappear. Preheat your oven to 450 and let’s go!
Simply halve the tomatoes lengthwise and top them with generous slices of the goat cheese.
Set them on a rimmed cookie sheet and drizzle with a little bit of olive oil. Even better if you have it, skip the olive oil and add a scrape of rendered bacon fat from the Springdell bacon.
Place these bad boys in the oven at 450 for about 15 minutes. Turn on your broiler and broil for just a minute or two to bring a nice toasty brown to the goat cheese.
I suggest serving these with a hearty and crusty bread. Once you sink your fork into them, they become a molten mess of deliciousness that just screams for a bread scoop. I’d also suggest a drizzle of maple balsamic glaze, but I feel like I’m putting that on everything lately. Oh well, I say go for it!
I hope you like this quick and simple one. As always, let us know the fate of your goat cheese, tomatoes, and other CSA items!
Happy National CSA Sign Up Day, everyone!
