Happy Halloween Springdell Family! It was a beautiful clear day, and a beautiful but chilly night for trick or treating. In my house we had a magician and a problem solving frog as costumes this year. The boys were old enough to stay out the full two hours and our dining room table is covered with their treats. Let’s back up a bit and talk about the annual neighborhood potluck.
For the last 4 years we have been attending and contributing to the neighborhood dinner we all gather for, potluck style, before we set off with our kiddos for the night. This year we hosted at our house. What fun to have the kids playing and eating dinner together and the adults chat and enjoy some good food. The food is usually festive and themed, like a pumpkin made out of vegetables. Tonight I decided to make a side dish with halloween colors. Orange sweet potatoes roasted with thinly sliced red cabbage.
Start by cleaning, peeling, and slicing about a pound of sweet potatoes. These guys are packed with vitamin A and fiber, just to name a few!
Slice the potatoes to be about a quarter inch thick. Toss them with olive oil, salt, and pepper.
Use half a small head of red cabbage.
Slice it thinly and add to the potato mixture, tossing to coat evenly with the oil.
This is a side dish with some sweetness so add 1 1/2 teaspoons of ground cinnamon and 1/4 cup of honey.
Use tongs to toss this with (or you will have a big mess on your hands) and make sure that everything has a nice layer of goodness. Pour this out onto a foil lined and lightly sprayed baking sheet. Into a preheated 375 degree oven it goes for 30 minutes or until the potatoes are tender and cooked through.
This comes out really nicely and look at the festive Halloween colors for tonight! It was a really nice combination with shredded chicken and a thick slice of corn bread.
