With a new school year comes a whole new set of germs to deal with. My kindergartner came down with the sniffles, so of course I came down with a full out, hit by a truck kind of cold. It really does show how age plays a part in health and wellbeing. Anyways, I was in need for some serious comfort food. What better than soup and brownies?
I know it’s meatless Monday but I really needed some chicken noodle. So, in went the chicken but by all means, leave it out to go meatless and just have a hearty vegetable soup. I put my zucchini to good use today.
Added some pasta (ok, a lot of pasta, give me a break, I’m sick) and boy did that feel good on my sore throat.
The star tonight isn’t my chicken soup however, it’s the apple brownies. Perfect for fall, warm and comforting. Here’s how I put them together:
Prep a 9 inch square dish with a tin foil sling, sprayed to be non stick. Preheat your oven to 325 degrees.
Peel two apples from your share and chop them pretty small, think about the end product. Mix the apples with 1 cup of sugar, 1/4 teaspoon of cardamom, and 1 teaspoon of cinnamon.
Then add 1 egg to the party along with 1/2 cup of oil, and 1/2 teaspoon of baking soda.
Next comes 1/3 cup of applesauce and 1/2 teaspoon of salt.
A cup and a half of flour is all that’s left to complete your batter. This is all mixed by hand, no mixer needed, so you keep the apples in chunks. Pour the batter in the pan and in the oven it goes for 30-45 minutes or until it is set in the middle.
Now, just sit back while your house gets filled with the beautiful apple cinnamon aroma….or so Alex told me, I’m too stuffed up to tell. I do know it tastes great though. Enjoy!
