Honorable Mentions – Springdell Summer CSA Pickup #12


 

Hello to our Fellow Springdellians!  We hope that you are settling in to the routines of the fall season, it’s hard to believe it’s already upon us!  It’s always fun to watch the colors of the share boxes change with the seasons.  Be prepped for more delicious oranges and reds!  Here’s a quick trip through our kitchens for the week, behind the scenes and beyond the posted recipes of the week.  Let’s start with Jess:

With all the tomatoes I couldn’t resist the Arrabbiata sauce made in the pressure cooker with bacon. This spicy sauce is always a crowd pleaser round these parts!

Pizza. Not much to look at, but there’s Springdell goodness hiding under that cheese. This was a picture of the kid’s pizza, as I ate the grown-up half (covered with peppers and onions) before snapping a shot.

I am so glad that Sarah covered corn this week in the blog with the Corn Chowder and Corn Casserole, as I had a repeat performance with the corn this weekend. We were camping and enjoyed the corn cooked on the camp stove with just about every meal. Here the corn is piled on the tiny camp plate with some Springdell Sliders.

This watermelon was an inspiration for a Watermelon Gazpacho! Enjoyed with some diced peppers, tomatoes, basil and onion, this simple soup was a great way to spice up one several melons in our share box!

How cool is this? I had no bowl big enough to house my gazpacho so I used the melon itself as a bowl. Yummy and a hit with the campers!

My little forager found some blackberries and was very generous sharing them with the fam. Eating fresh and local is a family affair!

The jingle bell peppers were de-seeded and stuffed with Havarti cheese before taking a quick trip through the camp pan with some Amish Roll Butter. Tin foil and some time in the camp fire would have worked too!

That creamy melty cheese against the sweet and savory pepper was heavenly!

I liked it so much, I did it again when we got home, this time on the barbecue grill with some onion and wrapped in foil. So good!

Can I just give one more shout out to Alissa’s Kale Brownies? They are almost gone, my family can’t stay away.

With school finally rolling this week things were at a much faster pace.  My honorable mentions were quick and easy.

This is is a combo of chopped cucumbers from my home garden and some Springdell tomatoes.  I sprinkled on some salt, pepper, and a splash of rice wine vinegar.

I picked up some mushrooms at the farm stand to make for my husband, he loves mushrooms.  These were sliced and cooked on low with just a touch of Amish roll butter.  Off the heat I splashed them with balsamic vinegar and they were a great side dish.

Here is the final look at the corn casserole.  I served it with cheese quesadillas and the casserole was perfect on top with a dab of sour cream.  With the summer corn the casserole was really sweet and the peppers from the share were a nice flavor mixed in there as well.

Heres a look at my highlighted smoothie of the week.  Surprise, it’s not green!!  With this smoothie the melon is the star!  I put about a cup of melon from my super fruit add on, some of the watermelon juice I made (shown in an earlier post), two frozen bananas and that was it.  It tasted like summer, very sweet, almost a dessert!
