The “Show” – Springdell Summer CSA Pickup #2


Welcome back friends!  I just needed to put this little guy as the starting photo.  On my way up to get my share this afternoon I was greeted by this adorable little face (and a second adorable face that isn’t in the picture), I’m sure you all were too.  Now, if you weren’t smiling already just thinking about how great your csa is and wondering what awesome food was about to come your way (that was totally what I was doing), then a smile MUST have appeared when you saw those sweet little ones.  Stop by for a visit, they seem to love company!

Today was pickup #2 for the Springdell summer share.  I look forward to this day every week.  Fresh, delicious produce kept me thinking all the way home about the different ways I can use strawberries, snap peas and kale.  I love this time of year!  Here’s what we are working with this week:

  • 2 quarts strawberries 
  • 1 bag of snow peas
  • 1 bag of snap peas
  • 1 bunch of lacinato kale
  • 1 head of lettuce
  • 1 bunch of collard greens
  • 1 bunch of rhubarb

  • 1 bunch of lacinato kale
  • 1 head of lettuce
  • 1 bunch of rhubarb

  • 1 bunch of red Russian kale
  • 1 bag of lettuce hearts

Hope you all tune in for some great ideas this week!  But for now, how about a quick smoothie?

Wash and remove a full bunch of kale leaves from the tough stems.

Into to the blender it goes with one peeled orange.

Add 4 chunks of watermelon and 5 mint leaves.  You may want to add some sweetner if you aren’t a fan of a strong kale taste, or just use a bit less kale.

Blend and you will end up with this totally amazing vibrant smoothie.  Into a travel mug it went and ended up happily in Alex’s belly on his way to work.  Enjoy!
