Before we begin our “Tell” here on the Springdell Show and Tell, we wanted to share an exciting new blog feature that is starting over on the official Springdell Farm Blog. There we present a new monthly series called “Meet the Farmers/Meet the Shareholders“, where we’ll feature a Springdell Farmer and a Springdell Shareholder. Today is our first post on the farm blog where we’ll be featuring Springdell Farmer Meredith Bempkins! We hope you’ll join us there as we get to know our fellow farm family on both sides of the farm stand counter.

Today we review the items in Springdell Farms Winter Share Box #10, and how we used the items in the box.
- 2 1/2 gallons of skim milk from High Lawn Farm, Lee, MA (Sarah got 1 qt half & half and 1 1/2 gallon low fat milk)
- Half & Half enjoyed in morning tea and in Maple Frosting
- Enjoyed as-is
- 1/2 gallon of cider from Box Mill Farm in Stow
- 5 hothouse tomatoes
- Springdell BLTs
- On top of arugula salad
- Sliced and sprinkled with rice vinegar
- Tomato Sandwiches, Arugula Salads
- Baked Eggs with Spinach and Tomatoes
- 5 sweet potatoes
- Crustless Sweet Potato Pie
- Springdell Hash
- Sliced and baked, served with smothered hamburgers
- Sweet Potato Hash
- Sweet Potato Cupcakes
- Tops of the sweet potatoes tossed in freezer with scraps for Veggie Broth
- 8 oranges
- Orange Hoisin Glazed Salmon
- Orange Flavored Tofu with Bok Choy Fried Rice
- Fresh Squeezed Orange Juice
- Peels used for cleaner and simmered with cinnamon for a lovely house deodorizer
- Ben’s buttermilk pancake mix, Jess only
- Ben’s Maple Syrup, Sarah only
- Enjoyed on pancakes
- Maple Syrup Frosting
- 1 pound of bacon
- Bacon Fat used in the Old Fashioned Cabbage Slaw, some stored for future use
- Springdell BLTs
- 1 piece of bacon crumbled and saved for garnish on the Baked Eggs
- Springdell Hash
- Crisped as a side for pancakes
- 1 package of sandwich steaks, Jess only
- Beef Kabobs, Sarah only
- 10 onions from cold storage
- Sweet Potato Hash
- Pepper Steak Sandwiches
- Smothered Hamburgers
- Tough peels went into the freezer for Veggie Broth
- Some still being stored for later use
- 1 head of green cabbage
- 1 bag of arugula
- Wilted Arugula with Garlic Lime Aioli
- Tossed with Our Favorite Raspberry Vinaigrette
- Berry Peanut Power Smoothies
- Arugula salad
- 1 bag of spinach
- 3 heads of bok choy
All veggie scraps were composted unless otherwise noted.

Looking for the recipe for the crustless sweet potato pie. Is it posted?
Hi Betsy, I didn’t post it yet as I ran out of egg when testing it (and it was my first time with this recipe). Hence, it was only on the “honorable mentions” this time around. I’ll definitely post it once I know it’s a good one! 🙂
In the meantime, Googling “Crustless Sweet Potato Pie” brings up several good looking versions, also. Hope this helps!
How do I subscribe to the “official Springdell Farm Blog?” I got to the site, but didn’t see any place to sign up for future posts.
I am not sure that they have the same set up over there.
I’ll check in with them and keep you posted here, in the meantime as they post I’ll be sure to call attention to it in our blogposts on this site.
