In warmer weather, one of our favorite things to do is to picnic at Springdell on the days that we are picking up our share. My boys sit on the picnic table and munch on their lunch while I peruse the share box and plan the weekly meals. Then we all go over and they help me to pick the herbs, I love to show them how to carefully clip and pinch the plants to facilitate further growth. I can’t wait for the warm weather to come again, it’s just around the corner now!
I was so excited when Jamie suggested that we save the grapefruit seeds for a project in the Springdell greenhouse. I’m looking forward to these seeds coming to life again!
We’ve been on a total ice cream kick here at the Anderson household. That Grapefruit Curd and Grapefruit Curd Ice Cream was great, so I went for a second batch. It’s like a teleport from winter to summer in every bite!
Look at the color of these beautiful Honey Citrus Carrots! You’d never know that they were months old and from the DIY Root Cellar!
Here are some slow cooker baked beans with bacon ends, maple syrup, beans, onions all from the Springdell bounty! These made fabulous leftovers.
Oven Fries are a simple and favorite side around these parts, whether they be made with sweet potatoes or potato potatoes. A little olive oil, a single layer of potatoes on a cookie sheet with a little sprinkle of kosher salt and optional herbs, 425 for 25 minutes and voila!
I used some of the Whole Wheat Flour to make a Chocolate Chip Banana Bread, but these never last long enough for a good pic. Here’s the last tiny piece.
Inspired by Sarah’s post on Orange Beet Cupcakes, I used my last beet to whip up these Chocolate Velvet Beet Cupcakes.
You may recall from the Springdell Facebook page a couple of years back I made these with Cream Cheese Frosting.
Today, the citrus from Share Box 9 was represented in the frosting, which was Orange Buttercream. The only problem was I didn’t realize I was almost out of powdered sugar when whipping up the frosting, so I pinch hit with some heavy cream, hence the lumpiness (and the reason this is only an “Honorable Mention”). I’ll work at this and bring it to the Show and Tell table in the future!
Behold! This Shiitake Mushroom and Caramelized Onion Pizza was just awesome.
Here is something that looks like it could actually harken from a time without snow on the ground. These are the last of the Springdell Sharebox #9 scrumptious tomatoes along with some incredibly flavorful spinach from the very last harvest from the Fat Moon hoophouse on the Meadowbrook land. This simple salad was a match made in heaven!
We enjoyed the salad with the remaining fingerling potatoes, and a succulent “Dell”monico Steak.
My last 2 oranges went into a delicious adaptation of Citrus Ginger Tofu Salad with Buckwheat Soba Noodles. The presentation isn’t as composed as the original as I was quite anxious to dig in… As new veggies and herbs come back into season, this will be one I’ll make again for sure!
