Creamy Herb Fingerlings 2


Not even kidding, these are so delicious and super easy in the crockpot.  You will love this one.  My family wants these potatoes in the regular rotation of classics.  You can use whatever herbs you have on hand, use a flavor blend that fits with your meal.  This side dish is creamy and flavorful.  We used it with pork chops and some of the cranberry quince relish

Ingredients
  1. Fingerling potatoes
  2. 2 tablespoons melted butter
  3. Salt, pepper, and herbs of your choosing
  4. 1/2 cup half and half
  5. 1/2 cup of shredded white cheese
Instructions
  1. Wash and dry the fingerlings, cut them in half lengthwise
  2. Put the potatoes in the crockpot and toss them with the melted butter and herbs
  3. Cover and cook the potatoes on high for 2-4 hours
  4. Add the half and half and shredded cheese and toss with the potatoes
  5. Keep the potatoes on the heat for and additional 30 minutes
  6. Serve and enjoy!

I made earlier in the week.  While I was eating these delectable little bites I also wondered if adding some chopped greens into the mix might be a nice addition?  Give it a try and let me know if it works.

    I was thinking that these Fingerlings would taste wonderfully with some precooked, and diced, Ham along with some Sautéed Onions, Shiitake Onions, and Cabbage. I like to make a One-meal Crockpot Recipe all at the same time. Then the leftovers could be Imersion Blended into a Soup. I will be adding this Recipe to this week’s Cooking List. Thank you Sarah.

    Yesterday Morning I assembled this Creamy Herb Fingerling Potatoe Recipe, (along with 1 Cup of Fresh Chicken Stock, and a handful of Chopped Shiitake Mushrooms, one Cup of Peeled and Chopped Butternut Squash (thankfully this can be prepared ahead of time and left in the Fridge in Plastic Storage Bags and cooks enough that my Husband doesn’t know that he is eating a “dreaded” Orange Veggie) and half of the just received Fresh Kielbasa Chopped. I tossed it all into my Crockpot (and stirred it up) and set it on Low. I was gone all day and what a lovely and delicious Recipe I came Home too. When I got Home, I did add a 1/2 Cup of Heavy Cream diluted with a 1/2 Cup of Tap Water and a 1/2 Cup of a Shredded Parmesan/Asiago Cheese Blend. I cooked this another 30 minutes and then turned off my Crockpot. This Yumminess was enjoyed by all! What a great Recipe!!
