Some days a warm, gooey grilled cheese would just hit the spot. Today was one of those days, it was freezing outside! As delicious as a grilled cheese can be, why not elevate it to “grownup” status? Especially when you have fresh goat cheese and Springdell tomatoes. That’s just what we did at my house today and it was all that I imagined it would be.
Sliced Springdell tomatoes, crumbled goat cheese from Westfield farm, mozzarella cheese and Springdell banana peppers (which I had pickled in my fridge). A fast and delicious lunch, and better than that, it was ready in minutes.
Tip: Instead of putting a dab of butter into the pan and melting it to grill your sandwich, I choose to butter the bread first which ensures the whole slice is coated. This way you get a nice even, brown, and toasty color with a great crunch too!
We we have also been known to add many other goodies to a grilled cheese, such as: apples, a dab of fresh cranberry sauce, pickles, herbs, bacon, or thinly sliced ham. Invent your own version, be creative! Of course it’s great when dipped in a warm homemade tomato soup!
